Apricot and Brioche Tart

What do you get when you are planning to make the Apricot and Cream Brioche Tart right before you receive fresh peaches from your in-laws? A delicious, free substitute for the apricots!


I’m not sure I would have even found fresh apricots for this recipe, and I had so many peaches that needed to be used within a day or two, so this one was a no-brainer. Aside from this substitute, I made sure to get crème fraiche and make a half recipe of the Honey Almond Syrup. I also made a half recipe of Brioche Dough beforehand.

Once the Brioche Dough was ready to use, I rolled it out into a rectangle on parchment paper. Knowing my husband and I would not be able to eat all this dessert ourselves, I made a smaller version for once to simplify my life. I then folded the edges to create a rim around the tart, and let the tart rise for about a half hour.


While the tart dough was rising, I combined the crème fraiche, yolk and some sugar in a bowl. When the dough was ready to assembly, I spread this mixture across the entire rectangle so it met with the overlapped sides. I then spread the peach slices around over the cream mixture, trying to place the slices in a simple design that also allowed for as many slices as possible. I brushed the edges with beaten egg, sprinkled more sugar across the entire tart, and baked it for about 32 minutes. Once I took the tart out of the oven, I carefully brushed the Honey Almond Syrup over the peaches and edges.

While I may never know what this recipe tastes like with apricots, the peaches were a promising replacement. I should have known this since I’ve made Brioche Dough before, but I was surprised by this dessert’s fluffy texture; I expected it to be crunchy since I anticipated a “tart”. I think this dessert is similar to a one-layer sheet cake consistency with the cream and peach flavors giving nice summer flavors. If you try this recipe and don’t have plans to take it to a party or work, definitely make a miniature version so you can eat it all in time!
